I'm bummed because you say they're one of your favorites, but I'm delighted at how easy (I think..maybe I'm getting ahead of myself) this recipe seems to be. I am bookmarking and adding it to my "to bake" list. :)
Can I use all-purpose flour instead of spelt or will that really impact things? And if I don't have a biscuit stamp, should I just cut out circles with a small cup?
Yes, they are quite easy! And I am so excited to hear they have made your 'to bake' list!
You should be absolutely fine to use all-purpose in the place of spelt. Hmmm, I have never made biscuits using a cup, but if you don't have any cookie cutters it's worth a go! Go for a cup around 6cm across, make sure the rim is thin to ensure a crisp edge, and lightly dust it with flour. If you give it a go, let me know how you get on!

I think that the Jam Sandwich would be the biscuit equivalent of a Victoria Sponge. The names not as catchy, but the cream filling plus a moister shortbread make it a better match.

Ah yes, a good point and I did ponder that. But according to the Women's Institute, a truely traditional Victoria Sponge doesn't contain cream, only raspberry jam and a sprinkle of caster sugar on top. So I think the Jammie Dodger fits too.
