Shell what would you suggest as a substitute for golden caster sugar? (not available here in Canada)

Oh, and in case you were wondering, the caster sugar will give a lighter result, and the light brown sugar a richer flavour. I did like both, but decided to go with the lightness of caster sugar.

You can use regular caster sugar, or I did use light brown sugar in one of my tests, and that came out well too.

This sounds delicious!!! Although I'm not pâtisserie trained and use very basic ingredients in my baking, I love the process much more than the product. I do have an enduring fondness for loaf cakes though. 💜

Thank you! I know what you mean, don't get me wrong, I love eating, but I love baking more! 😅 There is something about a loaf cake isn't there. So simple, but so spectacular.

This cake sound so delicious, and I like that it's lighter than a standard cake. I can imagine that lime leaf would pair nicely with cherry, too! What size loaf tin do you bake this in? There are 9x5 inch, 8.5x4.5 inch and 8x4 inch ones in the US.

That is an excellent question! Ok, so just measured my loaf tin and it's a 8.5x4.5inch one. I'vd updated the post to reflect that.

Thank you! Great to know. I'm not sure if I can find lime leaf, but I might try to make it anyway. Perhaps a glaze with powdered sugar, lime juice and lime zest will be nice on top?

Ah yes, I tried something similar in one of my tests, but omitted it because it over powered the lime leaf. But it could definitely work as a replacement.
