Happy midsummer to all. Let’s celebrate with these delightful mini pavlovas.
With the golden hue from the baked peaches, they are perfect for any Lammas or midsummer celebration. Serving with sunflowers and a golden tablecloth gives extra summer vibes too.
This particular flavour combination was inspired by a summer fruit salad recipe by Chef Anna Jones in her book: The Modern Cook’s Year. The combination of lime with peach was a revelation! Yet more proof of the power of acid to elevate flavour.
With it being pavlova season, I thought a sweet peach and tangy lime combo would be pretty damn lovely on some crumbly meringue with soft vanilla cream. And I was indeed, correct.
In previous posts, I have declared my love for golden and darker sugars. Golden caster sugar is used everywhere here. It adds depth of flavour, yet doesn’t detract from the star of the show - those lime spiked peaches.
