I love panna cotta…it’s a favourite of ours to make for dessert when we have a dinner party. Always light, delicious and refreshing, no matter how much one may have indulged 😊. This sounds like a wonderful version to try Shell…and your photography keeps getting better and better!
This sounds so delicate Shell, and the finish with honey would be perfect. Did you think of infusing the pineapple sage leaves in the honey for another layer of flavour?

I did try a version with sage in the honey, and the honey tasted amazing! But for some reason, we preferred the version without the infused honey. It was lighter and more delicate perhaps? But that is just a personal preference and it definitely still tasted fabulous with the infused honey.
Also, at the restaurant we struggled with panna cotta. Gelatine melts at around body temperature, the melting point of agar is much higher, hence the brittle gel. So we used a mixture of a few different gelling agents to achieve a better result. I must dig the recipe out.
Ah yes, I wanted to ask you about agar! I thought I should pop something in for vegetarians but I’ve only used agar once at college and never at home. I would love to see your recipe.

I like those flavoured herbs. But I once bought chocolate mint and it annoyed me because it didn’t taste of chocolate.
I had exactly the same response when I bought some chocolate mint last year! I do have some blackcurrant mint I like though.

It doesn't taste strongly of blackcurrant, but it has a nice, kind of dark flavour. Mint from the dark side.
