This week’s post has not gone how I envisaged. I had blackberries in mind.

Alas, the blackberries did not behave. My experiments didn't quite pan out. Some Blackberry Macarons were so close, but the recipe just isn't ready to be shared.

After a fruitless baking morning - where I learnt lots of ways not to bake with blackberries - I was feeling a bit ticked off. Then my daughter walked over with a green apple and asked to make an apple cake with the ‘pretty tray’.

She meant my mini Bundt tin and these delectable baby Bundts are the result.

Studded with ever so slightly stewed apple pieces, a generous sprinkling of cinnamon and crunchy Demerara sugar - they are an absolute celebration of Autumn.

My daughter was very specific in her bakin…
