Spiced Clementine Madeleines
With brown butter and a chocolate dip

Regular readers will know of my love of madelienes.
For the Autumn Equinox, I played with a Walnut & Pear version, researching some of the history of this delectable French, shell shaped treat. As well as an experiment into how to achieve that perfect madeliene hump. (Long story short; rest your batter in the fridge, turn the fan off in your oven.)
As I am now in the Christmas spirit, here is a Christmassy version, that I will be serving to my family on the big day.
Rather than putting my clementines in a stocking, I have zested them to add to these rich, brown butter madelienes. Fragrant with spices and dipped in dark chocolate for added luxury.
