Shell, these are so beautiful and just the right size! I don’t have as many mouths to feed anymore (spoiler alert: children grow up and move out!) so I don’t like having loads of tempting sweets in the house. These look perfect 🤩
Ah brilliant, I'm so pleased you like it! Thank you Betty.
I often make four inch mini cakes for small family birthdays. A three layer still feeds 6-8 people if you cut it right. And sometimes, that's all you have at a gathering!
This cake looks good Shell, they look cute in that size, but the extra cake tins would be a barrier for me. But your idea of making two and gifting one sounds good. But that would mean another cake tins.
The reduction in sugar and EVOO if fabulous, an excellent way to bake if it’s a regular thing in your life.
Thank you Lisa! Aw yes, I know getting different tins can be a pain. If I had to go again, I'd probably just buy a 4" and 6". They are the two tins I use the most. (As you can imagine, I have shelf loads of them.)
And thank you, I am definitely trying to attempt some more lighter bakes. It can be challenging, but worth the effort I think!
You are not the first person to suggest this so I reckon you are onto something.. I can definitely see this kind of post. My stand mixer would be up the top, oh and my silicone mats! One to contemplate!

Now there’s an idea for a post Shell. The basic equipment you have found most useful, the ones you use most often for baking.
In my cooking life it would be
1. several mortar and pestle, 2. a range of cutting boards
3. Food processor
4. Spice grinder
5. Sharp knives, small, medium and large.
6. A set of stainless steel bowls
7. Large flat bottom stainless steel wok
8. Medium large pot
9. Small frying pan
10. Small saucepan
Ok. That’s my essential kitchen equipment, but I’m not a baker.
Excellent list!

See that’s where I’m going wrong, I don’t have silicone mats.
😂
That's got to be it 😉
Absolutely fantastic!!!
Thank you!
