Lovely post, Shell! This is definitely “advanced” for me 🤓. I will leave the macaron making to more skilled hands but think about blueberry and mint combos of other varieties.

Macarons are tricky, I have worked hard on getting them right! And then some days, when the humidity isn't right, or you just over mix a tiny bit and they just don't work. Argh!

These are so beautiful Shell! I’ve made macarons twice. The first time: absolute fail! The second time they tasted good but looked messy. Yours truly are a work of art 🖼️

I haven't embraced using mint in drinks or desserts. It tastes delicious in tea though! Your macarons look lovely!

Blueberry & thyme is an excellent combo! Blueberry & mint is all about making sure the mint just lifts and doesn't overpower everything. We’ve chatted about vanilla before, but this is a combo where vanilla can really help - it rounds everything out.

I do understand, macarons can be a bit temperamental. It has taken me a while to get a recipe I am happy with. Italian meringue with cream of tartar is definitely the best port of call. With a bit of practice, you would totally smash it Sophia!

Love love love this series, Shell! Mint and blueberry is one of my all-time favourite flavour combos, and I've just realised that you very rarely see it together out in the wild 🤔

In my fantasy brain, I picture the nuns of St Brigid of Kildare to be some sort of band of adventurers - helping people and taking down brigands 🤣

Will definitely be saving this recipe for future use - may need to practice on some plain ones first, mind.

A quick question on the ingredients, is the 'shells' and 'paste' the same thing? Sorry for being dense! :D

Ah ok, thank you. If that's not clear, I need to adapt that. The paste is part of the shells. So to create your shell mixture, you have your ground almond paste and your Italian meringue, and you mix them together!
